These cakes were something I’ve wanted to make for a long time, but they always looked like too much hassle for a midweek meal. I finally made them last weekend and while they do take a while to make (half an hour in the oven plus prep time), they turned out very nice. I made them with roasted potatos and a green salad. Very filling and since I made about 12 of them, they stored well in the fridge as well.
